COOKING WITH KIRSTIE - CHICKEN WITH CHEESY LEEKS & MASH
Ingredients:
2 Fresh Chicken Breasts
2 leeks (trimmed, washed and roughly sliced)
2 large cloves of garlic (crushed)
1 tablespoon of butter
2 tablespoons of plain flour
250ml milk
100g of grated cheddar
Mash for 2
Method:
✨While making the sauce you can cook your chicken how you prefer - I used our George Foreman grill
✨ Melt the butter in a large sauce pan over a medium heat
✨ Add the leeks and soften, stirring occasionally (this should take around 5-10 minutes)
✨ Add the garlic and cook until fragrant (around 5 minutes)
✨ Add the flour and mix well making sure the leeks are evenly coated, keep this on the heat stirring occasionally for a further 3 minutes
✨ Pour the milk in slowly while stirring continuously
✨ Add the cheese and stir until melted, salt and pepper to taste
Serve warm with mash and your cooked chicken breast
